#3 – Out Of The Blue
Introduction:
OTB is a family business founded by Jean Marc and Sophie Gubian
Arriving from France in 1986, they fell in love with Sydney and the Australian way of life and soon Jean Marc was working as a chef at a popular seafood restaurant in Bondi where he stayed for ten years until deciding it was time for his own place.
The original Out Of The Blue opened its doors on Clovelly Road (where the Bendigo bank now is!) The little fish and chips with a French twist was doing well although after five years the lease was terminated. This was a very tough time as the future of the shop was unclear. Fortunately, luck struck and in 2001, Jean Marc and Sophie came across an empty shop for rent just down the road. With a lot of work to be done and not much time to do it, the couple took the plunge, poured out their life savings and built the OTB shop you have come to know and love.
From day one, they had the support of their beloved locals and over the years their popularity has grown as each summer more and more people seem to discover the OTB burgers as they come for a swim at beautiful Clovelly Beach. Out Of The Blue would not have become so popular if it wasn’t also for their older son Julien’s hard work, dedication, ambition and creativity. He and his girlfriend Matou are the next generation to continue the Out Of The Blue story.

Introduction:
The Wing Shack was born in 2004 in a small little ‘shack’ in Garden City, Colorado. The local community took to the Wing Shack’s unique spin on the buffalo sauce and the crispy chicken wing and before too long they were dreaming of a second location. The Loveland Wing Shack opened in 2006. Over the next few years they dedicated themselves to keeping their standards and values across two stores. No matter what the future held, they were determined that they would never sacrifice the quality of their food or the care for their customers and communities. Six years later, in 2012, they went big and opened two stores: one in the growing West Greeley community and one in Windsor. Four years later they opened their fifth store in Fort Collins, Colorado. In 2017, Wing Shack went inter-state and opened its sixth location in Cheyenne Wyoming. Wing Shack entered the 303 area code in 2019 when it opened its doors in beautiful Longmont, Colorado. And finally, 2021 was another big year for Wing Shack, opening two new locations: one in it’s adopted hometown of Greeley and the other just south in historic Johnstown, Colorado!
