Been missing Japan? Fear not. Nestled on Northbridge’s bustling William Street, Tosaka will have you back in Kyoto in a nanosecond.
Punters come to Tosaka for one dish: the tori paitan ramen. The buzz of the venue tells you just how exceptional it is. A deep, rich chicken broth, creamy white and simmered for 10 hours, is whipped into a foamy cloud that’s light yet packs a serious flavour punch.
The rest shines too: bite-perfect noodles, greens, spring onion and silky slices of chicken-breast chashu. Remain a purist, or choose from extra toppings, such as slow-roasted black garlic or a dash of spicy chilli shrimp sauce drizzled over the bowl before serving. Or add a generous slice of pork belly chashu or a soy-seasoned egg.
If you arrive early enough, nab one of the cosy wooden booths and peruse a drinks list littered with decent sake and Japanese beer options. Then order some sides – chicken gyoza is fresh and flavourful, with chicken karaage equally popular – while you wait for the main event. There’s little fanfare in the cheerful, casual service; the showstopper is all in the bowl, which is so intoxicating you’ll already be planning your next Tosaka visit.
