The prawn noodle, otherwise known as “hae mee” in Hokkien, is a comforting noodle dish that’s fragrant and savoury beyond compare, and can be eating either in soup form (with the delicious prawn broth) or in dry form (usually tossed with additional chilli for that added spiciness) with an accompanying bowl of soup broth. Flavoured using a combination of pork bones and prawn heads, prawn noodles is a dish that’s fundamentally simple yet always ends up tasting different wherever you go.

River South (Hoe Nam) is consistently ranked in the top prawn noodles for 7 out of the 8 sources that we researched. River South (Hoe Nam) Prawn Noodles was established in 1971 by Png Kim Soon, father of the owners. The Noodles Stall “Hoe Nam” was name after the province where their ancestor live. In 1989, the owner, Png Yi Seng took over the operation from his father. It was manage as a family business and operated by the owner and his sibling.  Originally Prawn noodles was only with Soup base.  It was evolve to dry noodles in later date. The prawn noodles was fairly monotonous in the early days. The last ten years because of diners tastes and requirements vary, originally a simple prawn noodles have added more variety, big prawns, pork ribs, pig tail to something more decadent such as baby abalone.​

2. Whitley Road Big Prawn Noodles 

Whitley Road Big Prawn Noodles first started from the demolished Whitley Road Hawker Centre, located under the Thomson flyover in the 1970s. ​They subsequently moved to the now-defunct Farrer Park Hawker Centre before settling into their permanent location at Old Airport Road Food Centre in 1996. They were the ones who popularised the now current practise where prawn noodle stalls offer upsized versions of prawn noodles using premium, expensive giant prawns.

8. 545 Whampoa Prawn Noodles

545 Whampoa Prawn Noodles is managed by third-generation hawker Li Ruifang with the help of her parents at Tekka Food Centre. 545 Whampoa was first started in Whampoa in the 1950s. Ruifang’s father took over and refined the recipe in the 1970s and opened the second stall at Tekka Food Centre while her aunt took over the origina stall at Whampoa Drive. 545 Whampoa’s popularity was evident from being featured in the late Anthony Bourdain’s show “Parts Unknown”.  The stall was also visited by three-Michelin-star chef Massimo Bottura, as well as two-Michelin-star chef Julien Royer.

9. Khoon Kee Tasty Prawn Mee 

Khoon Kee Tasty Prawn Mee is unique for straying away from the traditional prawn mee flavour. Instead, Khoon Kee uses a blend of vingear and chilli sauce for its dry noodles for that additional kick of spicy-sour awesomeness. The prawns are very fresh, crunchy, yet sweet and fragrant. 

The noodles are quite springy with simple flavourings of chilli and prawn soup, with some bean sprouts, vegetables and fried shallots added. The pork ribs is soft and tender. Its flesh comes off very easily from the bones. Prawns are standard stuff. The prawn soup on the side is nice, with strong tastes of prawns. For sure, this is quite a nice bowl of prawn mee.

Alternatively, their prawn and pork ribs noodles go for $5. The prawn broth is light without a heavy umami taste. Pork ribs are tender and flavourful.
