How did the Michelin Star came about? The brothers who formed the Michelin tyre empire was finding a way to increase demand for cars, and therefore the tyres they sold. So in the early 1900s, brothers Andre and Edouard Michelin came up with the Michelin guide books to let motorists know where to find petrol stations, hotels, or the best meals. They grew ever more popular, with the guide’s influence growing along the Michelin tyre business. They decided to hire a team of inspectors that’ll anonymously rate and judge restaurants, and the Michelin star rankings for restaurants first began in 1926. The rest, as they say, is history.

2. Jaan by Kirk Westaway

3. Basque Kitchen by Aitor

Introduction:

First located on 97 Amoy Street, One-Michelin-starred Basque Kitchen by Aitor is Singapore’s first Basque-centric restaurant that celebrates the country’s indigenous culture and produces.

Established in October 2018, the restaurant is a collaboration between Unlisted Collection and Head Chef Aitor Jeronimo Orive – formerly of the Michelin-starred kitchens of The Fat Duck and Mugaritz. This dining destination marries the latter’s passion for his Basque Country roots and a culinary curiosity that has taken him across the globe from Europe to Australia and now Asia.

Within a year of its opening, Basque Kitchen by Aitor was awarded its first Michelin Star in the 2019 edition of Michelin Guide Singapore.

The restaurant is now relocated to The Fullerton Waterboat House.

4. Shang Palace

Introduction:

5. Lerouy

Introduction:

LEROUY is a modern restaurant with an open kitchen concept serving a carte blanche french cuisine. Their menu changes from time to time to constantly feature exciting creations with their chef’s strong individual stamp. They were awarded 1 Michelin Star in Michelin Guide Singapore 2019.

Originally from Alsace France, this decorated chef is a son of a renowned restaurateur who brings with him a myriad of food cultures and techniques from his culinary exploits around the world. He spent his formative years receiving a strong foundation in classical French techniques under the tutelage and apprenticeship of Michelin-starred chefs Christian Le Squer (Le Pavillon Ledoyen) and Guy Martin (Le Grand Vefour), Pourcel Brothers (Le Jardin des Sens). Thereafter, he worked in Los Angeles, Shanghai, Marrakech, Abu Dhabi and Singapore

Chef Lerouy’s classical French foundation incorporated modernist leanings at Amador Restaurant in Mannheim germany , as well as at Alma by Juan Amador. It was at Alma where his culinary excellence and direction as the restaurant’s Chef de Cuisine / general manager was awarded the one star ¹accolade in the 2016 Singapore Michelin Guide.

6. Oshino

Introduction:

For Chef Koichiro Oshino, being a sushi shokunin (sushi artisan) represents a deep, existential calling, one that he has pursued for more than three decades.

From humble beginnings to coveted roles at leading sushi restaurants, he has maintained a profound respect for his work, its unique origins and every experience at the table.

As an award-winning Edomae sushi chef, he is deeply inspired by the poignant beauty of impermanence that makes each moment distinct and remarkable. Every dish must thus be prepared with utmost care and served with reverence.

In 2010, Chef Oshino was appointed Master Chef of Michelin-starred omakase restaurant Shinji by Kanesaka in Singapore – a post he held for almost a decade at both Raffles Hotel and Carlton Hotel.

7. Esora

Introduction:
Set in a heritage shophouse on Mohamed Sultan Road, Esora is a kappo-style fine dining restaurant helmed by Chef Shigeru Koizumi. It is a place that epitomises Chef Koizumi’s affinity with nature & attention to detail, to create a heartfelt dining experience that resonates beyond the dining table.

Emotive and imaginative, Esora showcases Modern Japanese cuisine guided by Chef Koizumi’s affinity with nature. Here, the chefs are storytellers and every dish is an intimate tale of nostalgia, seasonality and sheer fanaticism.

Esora is a warm and welcoming space, where the chef-guest relationship is always at the forefront. The main counter sits below a skylight dressed in Japanese washi paper – a feature that is a tribute to Chef Koizumi’s love for the sky. Like everything else, he sees the sky in shades, an ever-changing permutation of cloud patterns and shades of cerulean – once in a while a hue reminding him of home. It is also a reference to the restaurant’s name, in ‘painting in the sky’ in Japanese.

10. 28 Wilkie

Introduction:

28 Wilkie is a one-Michelin-starred contemporary Italian restaurant headed by Chef de cuisine,Seth Lai. Located on the ground floor of a 1930s conservation building, the elegant restaurant showcases Chef Seth’s accomplished take on seasonal produce, in particular premium ingredients from Japan.

12. Cure

Introduction:

Hailing from the idyllic village of Breaffy near County Mayo, Ireland, Andrew has worked alongside famous chefs at Michelin-starred restaurants around from the world and eventually Jason Atherton’s one-Michelin-starred Pollen Street Social in London. Andrew spearheaded Atherton’s first concept in Singapore and led the launch of Esquina to acclaim. The space quickly earned a reputation as Singapore’s top and pioneer Modern Spanish Tapas space. Following that, Andrew continued to work with Atherton and headed his second concept, The Study, a modern British restaurant.

Feeling that it was time for him to create a space he can call his own, Andrew took the step and launched his first concept as Chef-Owner with Cure, a restaurant that focuses on modern European cuisine in July 2015. Six years since its debut, the restaurant has established itself as one of the top dining spots in Singapore and has continued to remain popular among diners. He has since gone on to establish four additional restaurants under the umbrella of Cure Concepts, including Butcher Boy, an Asian-inspired bar and grill which launched in August 2017, and Bao Boy in July 2019, a cozy East meets West diner and bar that serves up bao burgers. Setting his sights beyond the shores of Singapore, Andrew debuted his first overseas venture, Ember Beach Club in 2020, in partnership with One&Only Desaru, Malaysia. His latest concept, CATFISH, followed shortly after in March 2020. A contemporary Fish Grill & Raw Bar, CATFISH serves up a seafood-centric fare highlighting the best of Asian ingredients.
